Enjoy this parfait to fuel up for a long day of work. This Joy Bauer recipe is only 300 calories and does not compromise on taste. 

Ingredients

  • 3 Tablespoons I Can’t Believe It’s Not Butter spread
  • 4 medium apples, diced
  • 2 Teaspoons ground cinnamon
  • 2 ½ Cups non-fat vanilla Greek yogurt
  • 1 Cup cooked quinoa

Directions

Melt the I Can’t believe It’s Not Butter! spread in a 1 quart non-stick skillet over medium heat. Add the apples and cinnamon, stirring occasionally until apples are tender, about 5 minutes.  Remove from heat and set aside.

Evenly layer about ¼ cup yogurt in 4 parfait glasses.  Top each with 2 tablespoons of quinoa, then ½ cup cooked apples. Repeat layers until the parfait glass is full.

Serve immediately. Enjoy!
