The apples, apple cider, and ginger beer add freshness to this pork dish — your kitchen will smell like fall as the ingredients cook together.
- 2 1/2 Pounds organic pork loin
- 1 Tablespoon salt
- 1/2 Tablespoon black pepper
- 5 organic shallots
- 6 organic garlic cloves
- 1 organic apple, peeled, cored, and quartered
- 1 Cup apple cider
- 6 Ounces ginger beer
Season pork with salt and pepper. Using kitchen twine, tie pork at ½-inch intervals. Let it sit at room temperature for 2 hours.
Preheat oven to 300 degrees. Place pork in a large heavy pot with a tight lid; arrange shallots, garlic, and apples around pork. Add broth, cider, and ginger beer. Bring to a boil over high heat, cover, and transfer to oven.
Braise pork until a knife slides easily through meat, 4-5 hours. Let meat cool in braising liquid.
