It is also Paleo, meaning ancestral-- meats, seafood, vegetables, fruits, and nuts. It is important to rotate your foods and if you are living a REAL FOOD life, your body might be some animal fat every once in a while. A family of 4-6 people should need no more than 1-2 chicken breats. Pair with a plate of alkaline vegetable like broccoli or kale and you'll have balanced bodies!

Ingredients
  • 2 large boneless, skinless chicken breasts
  • 1 cup blanched almond flour
  • 1 tablespoon organic adobo seasoning
  • 1 teaspoon salt
  • dash of cayenne pepper
  • 2 large eggs
  • 2 tablespoon grapeseed oil
  • 2 tablespoon olive oil
Directions
  1. Rinse and pat dry the chicken. Slice into medium bite-sized chunks. Try to keep the size consistent as this aids in cooking evenly. In a medium bowl, combine almond meal, adobo seasoning, cayenne pepper and salt. In a separate bowl, whisk the eggs. Place a handful of chicken bites into the egg, then coat with the almond flour mixture. Heat the oil in a large cast iron skillet over medium-high heat. Sauté the chicken nuggets in the oil for 4 to 6 minutes per side, until golden brown. Transfer your chicken nuggets to a paper towel lined dish. When ready, remove the towel and serve.
