2-Ingredient Fruit and Veggie Roll-Ups
These roll-ups are made with real fruit and vegetables. They make a fun and healthy snack for kids and adults alike!
- 3 Cups cooked veggies (carrots or beets)
- 3 Cups ripe or frozen fruit (peeled peaches or strawberries)
- 3 Tablespoons raw honey or agave
- 2 Teaspoons fresh lemon juice
Preheat oven to lowest possible temperature.
Line a large baking sheet with parchment paper.
In a high-speed blender, combine your chosen fruit and vegetable with honey and lemon until puréed.
Pour purée onto the prepared baking sheet, use a spatula and evenly spread mixture to 1/8” thick.
Place in oven and bake for 8 to 10 hours, or until the mixture is no longer sticky.
Remove from oven, roll-up, and store in a container for up to 1 week.
