This is a drink of the ‘other’ Texas. Eschewing the Lone Star State’s cliché image of cowboys, barbecue and pick-up trucks, the 100-Mile Dash harvests the Texas few people envision. This is the one of expansive citrus orchards, laden with plump Texas Ruby Red grapefruit, of rolling, green farmlands dotted with the hives of an expanding domesticated honey bee industry, of thriving farmer’s markets piled with locally-grown herbs and of an entrepreneurial company in the suburbs of Houston daring to produce its own special vodka – Dash. The 100-Mile Dash is a drink that’s sweet, sour, smooth and invigorating. A lot like Texas, really.
Make the honey syrup (following recipe), then combine all ingredients. Serve with a sugar rim and the fresh rosemary sprig for garnish.
Combine 3/4 cup local honey and 1/2 cup hot water. Steep 2 sprigs of fresh rosemary in the syrup for about 4 hours.
