Add herbs, spices, or finely chopped vegetables or other ingredients to this basic cheese. It is similar to mozzarella in taste and texture and is perfect for pizza and lasagna.
1 cup macadamia nuts
1 cup cashews
2 tablespoons Nama Shoyu
1 ½ tablespoons freshly squeezed lemon juice
Combine all the ingredients in a food processor. Turn on the machine and slowly add ¼ cup water through the hole in the top. Add more water as necessary, up to another ¼ cup, until the mixture is smooth, thick, and creamy.
Note: If not using immediately, cover and store in the refrigerator for up to 3 to 4 days.
