PointsPlus Garlicky-Kielbasa Spaghetti Squash Recipe
The combination of kielbasa and delicate spaghetti squash gets an extra bite from a hefty serving of garlic in this deliciously healthy recipe.
- 1 ½ pounds raw spaghetti squash, cut in half lengthwise and seeds removed
- 2 teaspoons olive oil
- 3 ounces kielbasa, finely chopped
- 2 cloves garlic, chopped
- ½ teaspoon ground cumin
- 1/8 teaspoon table salt
- 1/8 teaspoon black pepper
Preheat oven to 375 degrees.
Place the squash, skin-side up, on a large baking sheet and prick skin all over with a fork. Bake until tender, about 45 minutes.
After squash has cooked for 35 minutes, warm the olive oil in a large non-stick skillet over medium-low heat. Add kielbasa, garlic, and cumin. Cook until fragrant, about 2 minutes; set aside until squash is done.
Remove the squash from the oven and scrape flesh into the skillet using a fork (will resemble spaghetti strands). Toss together until evenly combined and season with salt and pepper.
