A lunch bag-inspired variation on a classic chicken satay.

Deliver Ingredients


For the chicken:

  • 1 teaspoon curry powder
  • 1 cup yogurt
  • 1 teaspoon ginger
  • 1 teaspoon soy sauce
  • 1 garlic clove, minced
  • 2 whole chicken breasts, cut into strips
  • Skewers, soaked in water

For the sauces:

  • 1 cup smooth peanut butter
  • ¼ cup soy sauce
  • 2 teaspoon-2 tablespoons chili paste, to taste
  • Juice of 2 limes
  • 2 tablespoon dark brown sugar
  • 2 teaspoon hot water
  • Plum sauce, for serving
  • Cilantro, for serving


For the chicken:

Mix curry, yogurt, ginger, soy sauce, and garlic together in a large bowl. Add in chicken, stir to coat, and cover. Marinate overnight in the refrigerator. Wipe off excess marinade and put chicken on skewers.   Grill until cooked through, about 5 minutes per side.

For the peanut butter sauce:

Combine peanut butter, soy sauce, chili paste, lime juice, and sugar together in a Cuisinart. Blend to combine. If the sauce is too thick, thin it out with a little bit of water. Pour sauce into bowl. Pour plum sauce into another bowl. Arrange grilled skewers on a platter and garnish with cilantro and serve with dipping sauces.

Allow meat to rest for at least ten minutes before slicing into it; otherwise, the juices will leak out.
