These pancakes are guilt free because they’re made without the customary fats and sugars. Once you’ve enjoyed these a few times, you might not even want the traditional kind!

Ingredients
  • 1 1/2 cup nonfat or soy milk
  • 1 cup plain nonfat yogurt
  • 1 cup white whole wheat flour
  • 2 large egg whites, lightly beaten
  • 1 cup old-fashioned oatmeal
  • 1 tablespoon raw brown sugar
  • 1/4 teaspoon salt
  • canola oil spray
  • 1 teaspoon baking soda
  • 1/2 teaspoon vinegar
Directions
  1. Preheat griddle or large skillet to medium-high. It’s ready when a few drops of water sprinkled on the surface dance. Pour the vinegar into the milk to make a faux buttermilk. Set aside.
  2. In a large bowl, combine flour, oatmeal, sugar, baking soda, and salt. In a smaller bowl, combine egg whites, faux buttermilk, and yogurt. Pour the wet ingredients into the dry ingredients, and mix well.
  3. Spray the preheated griddle or skillet with canola oil spray. Immediately, so the oil doesn’t burn, and working in batches, spoon 2 tablespoons batter onto griddle or skillet for each pancake. Cook until golden brown, about 2 minutes per side. You will need to re-spray canola oil on griddle or skillet after each batch, since there is no oil in these pancakes.
