Preview 'elBulli 2005-2011,' The Restaurant's Epic Anthology

Here are two promotional videos for Ferran Adrià's massive seven-volume elBulli anthology (stats: 2,720 pages; 1,400 images; 40 pounds), out March 2014.

The book, which covers all seven years of elBulli's existence, promises 750 recipes in seven volumes (up for presale now). Two of those recipes: Vanishing Ravioli and Mentholated Pond.

The first recipe, Vanishing Ravioli, is an iconic 2009 dish that uses potato starch to create an edible film, which dissolves when it touches water. This was used to create a transparent, melting ravioli, served with roasted pine nut praline, raw pine nut praline, and pine cone oil with roasted pine nut. The Mentholated Pond, another recipe from 2009, creates a hollow shell of ice, topped with sprinkles of tea, mint, and sugar. Check out the two promo videos below. elBulli 2005-2011 is out March 2014 for $625, less than $100 a book (a little bit less than Modernist Cuisine's massive collection).
