The team behind Paramount Events, one of Chicago's premier catering companies, is taking on the brick-and-mortar scene with Eden, opening in the West Lake District. Gardening, a passion of Quinn's, will be woven into the restaurant with 18 planters and an upcoming greenhouse to help cultivate ingredients.

Chefs David and Anna Posey make the leap from One Off Hospitality to their own restaurant this fall. Elske — the Danish word for "love" — will marry Midwestern and Danish styles with an emphasis on wood-fired cooking. This will be a sustainable, fast-casual sushi restaurant in a renovated space in Corktown. Chef and owner Mike Han wants you to able to drink, eat, and feel full for fewer than 20 dollars. His restaurant was a semi-finalist in Detroit's 2016 Hatch Competition; though he didn't win, people are still excited to try out his beautifully made sushi.

Chef Kate Williams — formerly of Republic and Rodin — will be opening her own space in North Corktown late this fall. The restaurant will seat up to 40 diners with a menu focusing on local flavors from Detroit farms and vendors. Williams has been hosting pop-ups in the meantime.

Suzanna Beall will open a seasonal, California-style eatery in a fresh, cozy space on the Upper East Side. Executed by Chef Diego Moya of Casa Mono, Blake Lane will serve breakfast, lunch, and dinner; it will highlight locally sourced, organic ingredients and showcase health-conscious, seasonally rotating dishes.

Blue Ribbon Federal Grill

Bruce and Eric Bromberg, chefs and co-founders of Blue Ribbon Restaurants, will introduce a new concept to their well-known roster later this year, Blue Ribbon Federal Grill. The concept will follow the Blue Ribbon tradition of the "no rules, something for everyone" approach, a casual and fun place that people will want to return to, whether it be with family, friends, or business associates. Located in Financial District, it will be the Bromberg brother's first non-Japanese project. The restaurant will be designed by long-time Blue Ribbon Restaurants and AKA collaborator, Asfour Guzy Architects, who also designed AKA Wall Street

The food at Chumlye's is described as classic American with a twist. Cocktails will be a mix of bespoke highballs and classics/originals from bar manager Jessie Dure. The owner is Alessandro Borgognone, who also owns Sushi Nakazawa.

Loring Place

Chef Dan Kluger is embarking on his first solo venture. After becoming known for balanced, vegetable-forward dishes as executive chef at ABC Kitchen and ABC Cocina, Kluger's new menu will comprise small and large shareable plates that will spotlight farms and farmers whom Kluger has gotten to know intimately over decades of frequenting the Union Square Greenmarket. The goal of this restaurant project is to build a space with "ingredients" as raw, natural, and imbued with integrity as those on the plate, while also creating a clean and modern aesthetic.

Maxwell's Chophouse

After a 14-year run in South Florida, the family-owned Maxwell's Chophouse is moving to New York City's NoMad neighborhood to open a 126-seat store of the same name. The traditional steakhouse run by the mother-daughter duo will have touches of modern throughout and will certainly add to the neighborhood's growing culinary offerings. The wine list will feature more than 1,000 bottles, and the menu will feature lobster corn bisque, fresh fish fillet, live Maine lobster, and Queen Cut prime rib.

SpoonFed NYC

Serving delicious Southern-fusion cuisine, the restaurant will feature two floors, a stage, and two bars. Working backstage as a dresser for Broadway's "Wicked," Randy Witherspoon shared his food and love for cooking with his co-workers throughout the Broadway show community. Every cast member and crew person helped Randy start his own catering company. Sample menu items include gluten-free catfish fingers; sweet potato crusted salmon; shrimp and potato gravy grits; and slow-roasted turkey wings.

ANEW Rooftop and Test Kitchen

ANEW is a charity-driven dining concept that will be opened by Big Brothers Big Sisters. It will feature opportunities for young people who are members of the organization. Every four months, the test kitchen will offer a new menu concept, while the event space plans to host 100 events annually. Each chef that comes out of the kitchen will agree to donate 10 percent of their proceeds to the Big Brothers Big Sisters Organization. The rooftop event space will be opened in early October, while the test kitchen won't open until early November, according to St. Louis Today.

The Blue Duck

The popular Washington, Missouri, eatery is opening in St. Louis this November just in time for Thanksgiving. The Blue Duck focuses on unique twists on classic comfort food like its famous DLT sandwich (roast duck, lettuce, and tomato), and the rest of the menu will boast similarly hearty fare with everything made from scratch, in house, according to Sauce Magazine.

St. Louis' newest pizzeria will feature unique twists on Italian-American fare like gnocchi with pork belly, caramelized onion, and roasted corn cream sauce, as well as build-your-own pizzas and "white" or sauce-less pies. Coming soon to St. Paul, this elevated Mexican restaurant will feature house-made tortillas as well as seasonal seafood and shareable entrees.
