Think that homemade pickles are a specialty confined to your grandmother’s kitchen? Use your microwave and you can make your own in a matter of minutes.
- 1 large cucumber, thinly sliced
- 1 medium onion, thinly sliced
- 3/4 Cups sugar
- 1/2 Cup white-wine vinegar
- 1/2 Teaspoon mustard seed
- 1/4 Teaspoon celery seed
- 1/4 Teaspoon turmeric
- 1 Teaspoon salt
In a microwaveable 2-quart bowl, combine all of the ingredients together and mix well. Microwave, uncovered, at 80 percent power for 5 minutes, stirring halfway through. Allow pickles to cool. Cover and chill at least 2 hours before serving.
