Caribbean Cake with Peanut Butter Frosting
Ingredients
  • 1/2 cup butter
  • 1/2 teaspoon baking soda
  • 1 well-beaten egg
  • 1 teaspoon baking powder
  • 3/4 cup ripe, mashed banana
  • 1/3 cup buttermilk
  • 1 1/2 cup sifted cake flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3/4 cup sugar
  • 2 tablespoon butter
  • 1/8 teaspoon salt
  • 1 1/4 cup icing sugar
  • 2 tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • 1 tablespoon orange juice
  • 2 tablespoon peanut butter
Directions
  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar until fluffy. Combine beaten egg, banana, milk and vanilla. Add sifted dry ingredients alternately to creamed mixture — stirring lightly after each ingredient.
  3. Pour into a buttered nine by nine pan. Bake for 35 to 45 minutes. Cool.
  4. Cream butter, peanut butter and salt. Add sugar alternately with juices, then add vanilla. Beat until smooth and creamy. Ice cake.
