Caribbean Cake with Peanut Butter Frosting

Ingredients

For the cake

  • 1/2 Cup butter
  • 1/2 Teaspoon baking soda
  • 1 well-beaten egg
  • 1 Teaspoon baking powder
  • 3/4 Cups ripe, mashed banana
  • 1/3 Cup buttermilk
  • 1 1/2 Cup sifted cake flour
  • 1/2 Teaspoon salt
  • 1 Teaspoon vanilla
  • 3/4 Cups sugar

For the frosting

  • 2 Tablespoons butter
  • 1/8 Teaspoon salt
  • 1 1/4 Cup icing sugar
  • 2 Tablespoons lemon juice
  • 1/2 Teaspoon vanilla
  • 1 Tablespoon orange juice
  • 2 Tablespoons peanut butter

Directions

For the cake

Preheat oven to 350 degrees.

Cream butter and sugar until fluffy. Combine beaten egg, banana, milk and vanilla. Add sifted dry ingredients alternately to creamed mixture — stirring lightly after each ingredient.

Pour into a buttered nine by nine pan. Bake for 35 to 45 minutes. Cool.

For the frosting

Cream butter, peanut butter and salt. Add sugar alternately with juices, then add vanilla. Beat until smooth and creamy. Ice cake.
