A wonderful (and flavorful) syrup that is perfect to use when mixing cocktails or for adding sweetness and a hint of lemon to iced tea.
Combine the sugar and water in a non-reactive 2-quart, heavy-bottomed saucepan over medium-high heat and bring to a boil. Makes sure all of the sugar crystals completely dissolve. Remove from the heat and pour into a clean medium-size bowl. Let cool completely before using.
