Ingredients
  • 1/2 cup confectioners’ sugar, plus more for dusting
  • 2 cup plus 6 tablespoons flour
  • pinch of salt
  • 1 cup butter, plus more for greasing
  • 4 eggs
  • 2 cup granulated sugar
  • 6 tablespoon lemon juice
  • zest of 1 lemon, grated
Directions
  1. Preheat the oven to 350 degrees.
  2. Blend together the confectioners’ sugar, 2 cups of the flour, and salt. Cut in the butter until the mixture is crumbly. Press into an oblong, lightly greased baking pan.* Place in the oven and bake for 20 minutes. Remove from the oven.
  3. With an electric mixer, beat the eggs, sugar, remaining flour, and lemon juice until well combined. Spread the lemon zest on top of the baked crust. Place in the oven and bake for 25 minutes. Remove from the oven. When cool, sprinkle with confectioners’ sugar and cut into squares.
