- 1 cup sugar
- 3 cups water
- 3 lemons, juice of 1 and zest of all 3
- Fresh mint leaves, for garnish
Dissolve the sugar in boiling water and set aside to cool. Add the lemon juice and zest to the cooled mixture and transfer to a metal cake pan. Freeze the mixture, making sure to stir the crystals every so often so that the texture is powdery instead of making a solid ice block. Serve the lemon ices with fresh mint leaves.
