Bloom the gelatin by soaking it in cold water until thoroughly soft. Bring the water and sugar together to a boil. Once boiled, add the glucose. Bring to 131 degrees Celsius and add in the gelatin. Whip egg whites with an electric mixer and when it begins to be light and fluffy (double in size), slowly pour in the sugar. Split the vanilla pod and scrape vanilla seeds with a pairing knife. Add the seeds to the mix. Whip until mixture cools to a light warm temperature and is slightly shiny.
