Hearty Vegetable Turkey Lasagna

On Sunday’s I normally go through the freezer, refrigerator and pantry. I have been doing this since my kids were little as I plan my meals for the week. I don’t plan for the week anymore it is more a day to day thing for my husband and I but going through everything we have handy is still a tradition.

Today I have sweet potatoes in the pantry. In the freezer I found eggplant that I have already grilled and saved. In the refrigerator I have 1 yellow pepper, 1/2 red pepper, onion, garlic and zucchini. I always have canned diced tomatoes and herbs so this was a great creation. I am really proud of myself and may not want to share this dish – I probably will..

This is what I did to create this amazing Paleo Recipe using a sweet potato crusted hearty vegetable turkey lasagna.

I love to use my Panderno  spiral vegetable slicer, when spiraling my potatoes into noodles.

Notes

Tip:  I like using seasoned petite diced tomatoes (basil and oil or garlic and oil) If you only use plain then add a little extra parsley and basil.

Ingredients

  • 1-2 medium sweet potatoes
  • 1 Tablespoon olive oil plus more to coat baking pan and drizzle
  • 1 Pound ground turkey (or beef)
  • 1 yellow bell pepper, chopped
  • 1/2 red pepper, chopped
  • 1 small yellow onion, chopped
  • 1 bag baby spinach
  • 2 cloves garlic chopped
  • 1 1/2 Teaspoon dried parsley
  • 1 Teaspoon dried oregano
  • 1 Teaspoon dried thyme
  • 1/4 Teaspoon red pepper flakes
  • 2 Teaspoons sea salt, divided
  • 1 Teaspoon freshly ground pepper, divided
  • 2 Cups eggplant (optional)
  • 2 zucchini
  • 1 (15 oz) can petite diced tomatoes

Take your 9×12 or your favorite baking dish and lightly coat with oil.  Preheat oven to 350 degrees. Using your spiral maker create noodles with your sweet potatoes. Heat your large saute pan over medium heat and add oil.  Saute your ground turkey until brown (about 7 minutes).  Remove from pan and add to a bowl. Using same pan saute peppers, onion, spinach and garlic for 7 minutes over medium heat.  Add in herbs, 1 teaspoon sea salt and 1/2 teaspoon of pepper.  Saute for another 2 minutes then remove from heat. If you have other vegetables such as eggplant then thinly slice and saute or grill. Thinly slice zucchini and set aside To prepare your lasagna.  Add the sweet potato noodles and mold to the baking dish (and up the side). Add turkey to make a layer of eggplant slices, Add vegetables then top with zucchini and season with salt and pepper.  Drizzle olive oil. Bake for 30 minutes.  Add petite diced tomatoes and bake for an additional 20 minutes.
