- 4 russet potatoes
- 1/4 Cup unsalted butter, thinly sliced
- Salt and pepper, to taste
Preheat oven to 400 degrees.
Using a sharp knife, make crosswise slits in each potato, about 1/8-inch apart and stopping about 1/4-inch from the top and botton of each potato. Place 1 butter slice in each of the slits. Season with salt and pepper.
Transfer potatoes to a baking sheet and bake for about 1 hour until crisp and browned.
