Greek cuisine is characterized by the use of fresh seafood and flavor-amplifying ingredients like lemon, garlic, olive oil, oregano and other herbs, and, of course, feta cheese. Greek food is also composed of small dishes and dips like Skordalia, Melitzanosalata, and tzatziki, which incorporate numerous vegetables and yogurt. Simple cooking and the emphasis on these types of healthy ingredients is one of the reasons why Greek cuisine is part of the Mediterranean Diet.
