Ingredients

  • 3 Pounds broiler-fryer chicken
  • 1 onion, sliced
  • 1 (14-1/2 oz.) stewed tomatoes, undrained
  • 1 (4 ounce) package ATHENOS Crumbled Feta Cheese with Garlic & Herb
  • 2 Tablespoons chopped fresh parsley
  • 2 Tablespoons oil

Directions

Cook chicken in hot oil in large skillet on medium heat for 8 minutes or until chicken is browned on all sides, turning occasionally. Remove from skillet. Drain skillet, reserving 1 Tbsp. drippings in skillet.

Add onions to skillet; cook and stir 1 minute. Return chicken to skillet; add tomatoes. Cover. Simmer on low heat for 25 minutes or until chicken is done (165ºF).

Top with cheese and parsley.
