Finding interesting and new hors d'oeuvres to serve is often a challenge — they can be time-consuming if you want them to have a lot of flavor, and bland if you want to make them quickly. But chef and writer Rachel Gaffney has a recipe that she believes is a winner with any crowd. The secret is using simple but high-quality ingredients and then letting them speak for themselves. As she notes, "Let the ingredients be the star."
Her Durrus Cheese Fillo Bites take a cheese from Gaffney’s native County Cork, Ireland, and combines it with a light delectable pastry, pistachio nuts, and quince. She believes the secret is in the Durrus cheese: "It has a soft pink rind and it’s a raw cow's milk cheese," she says. And it really pulls the whole dish together.
