Drink This: Hidden Behind An Unmarked Door, The Hive Has Just Three Cocktails

"It's easy to overcomplicate cocktails," says bartender Jon Waisman, "but I like to keep them simple." Sound refreshing? Head to The Hive, a new cocktail lounge above Honey's restaurant in the West Loop, where Waisman's list has just three drinks, all born from ingredients already on hand at the main bar downstairs.

That explains the genesis of the Gin Gin ($12), an ideal cocktail for spring. Waisman was intrigued by an excess of plum brandy from Chicago's Rhine Hall Distillery around the bar, so he decided to do something with it, creating a crisp cocktail that falls within the Moscow mule family.
