Use Fall Artichokes for This Chicken and Artichoke Dish
Just as the weather starts to cool off, a second artichoke crop is ripening in California, so head over to the farmer’s market or grocery store to take advantage of this second, but no less delectable crop.
This time around, you may notice that your artichoke options are smaller than the spring crop. When selecting your artichokes, look for ones with brown tips on the outer leaves. While you might initially be turned off from browning produce, these are generally the most tender and flavorful of all.
In honor of one of our favorite fall foods, check out our recipe for chicken with a simple artichoke pan sauce perfect for a quick and healthy dinner.
The star of the dish, the pan sauce is made with white wine and fresh herbs. Use fresh artichoke hearts for the most vibrant flavor. Your stomach will thank you when you are devouring this fresh, flavorful dish.
