Small Batch Picnic Recipes

As fall quickly approaches, we're big fans of spending weekend afternoons picnicking with good company under some of the last of summer's warmth.

We know there are classic picnic favorites like fresh fruit and potato salad always in your basket, but what about shaking things up with a few new dishes ready to be taken to go? Here are a few fun small batch recipes that are sure to become your new basket staples – and impress anyone joining you al fresco. 

Ditch the soda or lemonade and start off with a blended drink called lassi, a refreshing Indian beverage made with yogurt, fruit and honey. Make a batch of this Blueberry Lemon Lassi before you head out the door and pack in a travel pitcher. Once you arrive, pour and serve to friends in a classic Ball Canning pint jar.

This recipe for Sweet Pickled Radishes makes just about one pint's worth, a perfect side dish. Crunchy and packed with a tangy flavor, radishes are the new cucumbers and make for a nice addition on the side of a sandwich, on a cheese plate, or atop a classic green salad. 

We know cold cut sandwiches are an easy favorite for picnic lunches, but if you have access to a grill in your park of choice we recommend giving this flavorful Barbecue Sauce a shot! The recipe makes about 3 pints of sauce which can be brought to spice up chicken wings, burgers, ribs and more.

No meal is complete without a sweet treat ending, but this one is for serious picnickers only! This recipe makes about a quart of watermelon sherbet- enough for a large handful of friends to enjoy. Grab some dry ice ahead of time to keep this frozen until you're ready to dig in.
