Start by heating a tablespoon of oil in a large pot. Be sure to use a pot that has a lid. Then, add ¼ cup of popcorn kernels and a pinch of salt and stir the mixture gently with a wooden spoon. Cover the pot with the lid, leaving it slightly ajar so that steam can escape. When the kernels start popping, reduce the heat so that the popcorn doesn't burn.

In a small bowl, combine ¼ cup of confectioner's sugar, a teaspoon of granulated sugar, and a teaspoon of light brown sugar.

Then, listen to the kernels. When the popping start to slow down, turn the heat off and sprinkle the sugar on top of the popcorn. Turn the heat back on (on a very low setting), stir the popcorn, and cook it for less than a minute, just long enough for the sugar to start to caramelize. Stir the popcorn one more time and then pour it into a serving bowl.
