Ingredients
  • 2 cup all purpose flour
  • 2 teaspoon ground cinnamon
  • 1 1/2 teaspoon baking soda
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cup finely chopped peeled tart apples
  • 2 cup sugar
  • 2 tablespoon softened butter
  • 1/3 cup packed brown sugar
  • 1/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup flaked coconut
  • 1/3 cup chopped walnuts
Directions
  1. In a bowl, combine the flour, cinnamon, baking soda, and salt. Add the oil, eggs, and vanilla. Mix well (batter will be thick). Then toss the apples with sugar and fold them into the batter. Spread onto a greased and floured 13 x 9 inch baking pan.
  2. Beat the butter, sugars, and cinnamon in a small bowl. Stir in the coconut and walnuts. Mix well.
  3. Sprinkle over the batter and bake at 350 degress for 40-45 minutes or until the cake tests done.
