Cinnamon Apple Cake

Ingredients

For the cake

  • 2 Cups all purpose flour
  • 2 Teaspoons ground cinnamon
  • 1 1/2 Teaspoon baking soda
  • 3/4 Cups vegetable oil
  • 2 eggs
  • 1 Teaspoon vanilla extract
  • 3 Cups finely chopped peeled tart apples
  • 2 Cups sugar

For the topping

  • 2 Tablespoons softened butter
  • 1/3 Cup packed brown sugar
  • 1/3 Cup sugar
  • 1/2 Teaspoon ground cinnamon
  • 1/2 Cup flaked coconut
  • 1/3 Cup chopped walnuts

Directions

For the cake

In a bowl, combine the flour, cinnamon, baking soda, and salt. Add the oil, eggs, and vanilla. Mix well (batter will be thick). Then toss the apples with sugar and fold them into the batter. Spread onto a greased and floured 13 x 9 inch baking pan.

 

For the topping

Beat the butter, sugars, and cinnamon in a small bowl. Stir in the coconut and walnuts. Mix well. 

Sprinkle over the batter and bake at 350 degress for 40-45 minutes or until the cake tests done.
