Cinco de Mayo falls on a Thursday this year, and we think this is the best night for a pre-weekend, raucous cocktail party. Make a couple fun, flavorful finger food offerings like mini flautas and Baked Mexican Chicken Meatballs (with toothpicks) for friends to graze on. While we usually recommend a dip for the center of the coffee table, this year we're putting out a big plate of Potato Chip Chilaquiles (our spin on classic nachos) instead. Make sure you round out the menu with something sweet like our Mexican Wedding Cakes, to stand up to all the lip-puckering tequila drinks. Oh, and don’t forget the piñata.
