Looking for comfort food that’s quick and easy to make? Whip up these chicken, avocado and cheddar melts which are ready-to-eat in 10 minutes.
“The ingredients are pantry staples, so there’s usually no need to run to the store to enjoy this quick and delicious sandwich,” says Safeway Safeway Executive Chef Jeff Anderson. “And I prefer a cold avocado on a hot sandwich, so I save the avocado for last when making this recipe and add a squeeze of fresh lime juice.”
- 1 loaf Artisan Como or Pugliese Bread
- 2 Tablespoons butter, melted
- 1 clove garlic, minced
- 3/4 Pounds cooked chicken, thinly sliced
- 1 firm-ripe avocado, peeled, pitted, and cut into 12 equal wedges
- 1 1/4 Cup shredded cheddar cheese
Preheat oven broiler to high. Place bread on a cutting board. Cut about 1 1/2 inches off each end of the loaf; save for another use. Cut remaining loaf in half crosswise. Cut each half horizontally in half again to make 4 equal pieces.
Place bread, cut sides up, on a baking sheet. Mix together butter and garlic; brush evenly over cut sides of bread. Broil bread 4 inches from heat just until it is very lightly browned, about 2 minutes. Remove from oven.
Top each piece of bread with equal amounts of chicken and then avocado slices. Sprinkle each equally with cheese. Return to oven and broil until sandwiches are hot and cheese is browned and bubbling, 3 to 4 minutes. Watch carefully to avoid burning.
