Chef Gordon Ramsay Brings a Taste of Asia to French-Inspired Menu
Celebrity chef Gordon Ramsay's maze Restaurant and bar in Mayfair, London, is celebrating the latest addition to their French Asian menu a sushi bar which will add an exciting new dimension to the restaurant. Guests will be able to enjoy top-notch sushi and sashimi dishes in various ways. At the counter itself, a selection of drinks can accompany the menu in the main restaurant.
Maze grill will also be offering dishes from the sushi bar on their menu. Combine sashimi and sushi to complement the grass-fed Aberdeen Angus beef, the Dedham Vale beef (aged for 31 days) or the more decadent wagyu, among others. “The sushi bar has always been something we wanted to offer our customers,” commented Stuart Gillies, Managing Director of GRH.
“We felt it was the perfect element to introduce to our French Asian menu at maze, and sits perfectly with maze Grill. Finding the right chef with the European Asian understanding was more of a challenge, so we are very pleased to be working with Gohei.” With his French Japanese heritage and experience, Chef Gohei Kishi will bring a unique style to the award-winning Mayfair restaurant.
Growing up in his parents’ restaurant in Paris, Gohei decided to train as a chef in his family’s native country of Japan. He remained there for a decade, returning to Europe in 2010 to work in Barcelona and Madrid before joining the team at maze. His dishes include, Kani Snow Crab, a snow crab dish combined with a variety of mixed seaweeds, dashi and pickled wasabi as well as Hamachi Tataki, a meal prepared using thinly sliced yellow tail with aromatics of chive, sesame and grated radish, served with yuzukosho dressing and white seaweed.
Another specialty is the Salmon Sashimi, made with thin slices of marinated salmon over a bed of finely chopped, sweet Mediterranean tomatoes and red onion with ponzu-olive dressing. Maze sushi bar’s menu also includes a sushi platter, sashimi moriawase – a variation of sashimi served on crushed ice, and various nigiri with both raw and lightly flamed fish served at different temperatures. In addition to this, sake will also be served throughout the restaurants for those wishing to enjoy the new dishes with a more traditional pairing.
