Ingredients
  • 3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup pecans, chopped
  • 1 pinch of salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup granulated white sugar
  • 1 1/2 cup unsalted butter
  • 5 eggs
  • 2 cup light brown sugar
Directions
  1. Preheat oven to 325 degrees F. Spray a loaf pan with non-stick cooking spray.
  2. Mix together the flour, baking powder, and salt. Set aside.
  3. In the bowl of a mixer fitted with a paddle attachment, cream together the butter, brown sugar, and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Sir in the chopped pecans. Pour batter into prepared pan.
  4. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
