Ingredients
  • 1 avocado, halved and stone removed
  • 2 eggs
  • 2 slices of bacon, cooked then crumbled
  • cheddar cheese
  • sea salt and freshly cracked black pepper, to taste
  • hot sauce
  • toasted "everything" bagel thins
Directions
  1. Preheat oven to 425 degrees F. Crack the eggs in a medium bowl, careful not to puncture the yolks. Set aside. Cut avocado in half and remove stone. Scoop out some of the avocado pulp to make a larger cavity for the egg. In a medium baking dish, rest the avocado half inside the edge of the dish so the avocado does not tilt over. With a medium spoon, gently scoop out one of the yolks and place it in the hole of the avocado. Continue spooning the egg whites into the hole until it's full. Repeat for both halves. Add salt and fresh cracked pepper on top of the eggs. Top with shredded cheddar cheese (if using). Place baking dish in oven and bake until eggs are set. Baking time will vary depending on how much egg you have and how big your avocado is. Sprinkle crumbled bacon on top. Spread the avocado/egg onto toasted bagel halves. Season with additional salt and pepper to taste and hot sauce, if needed.
