The Big Al from Red's Eats


The Big Al

A creation of Al "Red" Gagnon, the Big Al is one of the most popular items on the Red's Eats menu. 


This recipe was adapted from Red's Eats: World's Best Lobster Shack by Debbie Gagnon Cronk and Virginia Wright (Down East 2010). 


  • 3 slices ham
  • 4 strips bacon
  • One 5-inch jumbo sesame seed bun, brushed with melted butter
  • Mayonnaise, for serving
  • 1 deep-fried boneless chicken breast
  • 1 leaf lettuce, for serving
  • 1 slice tomato, for serving


In a small sauté pan or on a flat-top grill, grill the ham and bacon until cooked through. Grill the buttered bun until toasted. Slater the bun with mayonnaise and stuff it with the meats. Top with lettuce and tomato.
