Eggnog Popcorn Balls

Although you're probably used to seeing eggnog poured into your cup during the holiday season, this recipe gives the timeless beverage a twist. Popcorn is made with eggnog extract and marshmallows, the snack is one you'll want at holiday parties to come.

Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 1/2 Cup Orville Redenbacher's® Gourmet® Popping Corn
  • 5 Cups miniature marshmallows, divided
  • 5 Tablespoons butter, divided
  • 3 Teaspoons eggnog extract, divided
  • Freshly grated nutmeg for garnish

Directions

Spray large bowl, rubber spatula and piece of waxed paper with cooking spray; set aside.

Pop kernel corn according to package directions.

Remove all unpopped kernels and place half of popped corn (about 8 cups) in bowl.

Place 2-1/2 cups marshmallows and 2-1/2 tablespoons butter in microwave-safe bowl; microwave on HIGH 45 seconds or until marshmallows melt and mixture blends together smoothly when stirred.

Stir in 1-1/2 teaspoons extract.

Pour marshmallow mixture over popped corn in bowl.

Toss with rubber spatula to coat.

Divide mixture and shape into 6 balls.

Place on waxed papper.

Garnish with freshly grated nutmeg.

Repeat above steps with remaining popped corn, marshmallows, butter, extract and nutmeg.
