Fettuccine Alfredo
This version of the classic Italian-American dish, fettuccine alfredo, is significantly lighter than the original, but you'd never know by tasting it. The key to this recipe is cooking the pasta risotto-style, which coaxes the starch out of the fettuccine to create the rich and creamy basis for the sauce. After the pasta is done cooking, a touch of milk (or light cream) and a sprinkle of cheese are the finishing touches for this endlessly comforting dish.  Click here to see Cozy Comfort Food Recipes.

Best Casserole Book
Fettuccine Alfredo is a classic pasta dish. I’ve converted it into a casserole and included chicken or turkey meat; it’s a great way to use leftovers. I often make this on Friday after Thanksgiving with almost any kind of pasta I happen to have on hand. Alfredo sauce is made with butter, Parmesan, and cream. Quick Alfredo sauce deviates from that recipe but produces a creamy sauce that is easily made and better than the bottled variety you can buy. Vegan Instant Alfredo
This sauce is really creamy and adds a nice boost of protein to an otherwise very high-carb dish. I love dipping fresh toasted bread in it and also jazzing my pasta dish up with peas and broccoli. Also, try adding fresh tomatoes over the top in the summer for a nice, refreshing pasta dish.

Chicken Fettuccine Alfredo
Who says you can’t have fettuccine Alfredo on a diet? Whole-wheat pasta gives this dish a healthy edge, while cutting out some of the heavy cream and using Greek yogurt instead maintains the richness, while cutting down on calories. It’s a win-win.

As chef Jim Burke describes, this decadent dish is "immensely satisfying" to make. It’s simple and straightforward, but so creamy and indulgent that you may find yourself getting lost in the meal (and hopefully forgetting what day it is altogether).

Alfredo sauce is credited to Chef Alfredo di Lello, who combined it with cooked fettuccine in the early 1900s. Since then, we’ve found many ways to use this sauce and even make changes in its preparation. In this simple-to-make version, cream cheese replaces the cream in the original sauce.Click here to see the Pasta and Chicken Alfredo recipe. Adapted from “The Best Casserole Cookbook Ever” by Beatrice Ojakangas.

I have a love-hate relationship with alfredo sauce. I love to eat it but then I hate the guilt that comes with eating it! This recipe solves that problem as it does away with the guilt. How? This recipe does away the heavy cream and cream cheese that you'll find in many recipes. Not to worry, this lower-fat and lower-calorie remake does not degrade the taste. You'll swear you're eating the real thing!
