This classic BLT sandwich is made extra delicious with avocado.
Ingredients
For the chipotle-lime mayonnaise
- 1/2 Cup mayonnaise
- 1 Teaspoon chipotle in adobo, minced
- 1 Teaspoon garlic, minced
- 1 Tablespoon fresh lime juice
- 1 Tablespoon chopped cilantro
- Salt and pepper, to taste
For the sandwich
- 6 slices Pumpernickel bread, toasted
- 8 slices bacon, cooked and crispy
- 1 tomato, sliced
- 1 head of lettuce, leaves torn
- 2 avocados, pitted, seeded, and sliced
Directions
For the chipotle-lime mayonnaise
Combine all ingredients in a medium bowl and refrigerate until ready to use.
For the sandwich
Spread the chipotle-lime mayonnasie on each of the bread slices. Layer on 2 bacon slices on each, 1 tomato, 1 lettuce leaf, 1/2 an avocado. Top with the other piece of bread.
