Arugula Salad with Apple Vinaigrette Recipe


This salad is perfect for any meal. Peppery arugula and sweet apple vinaigrette create a great balance of flavors to start your dinner.


For the vinaigrette:

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon red wine vinegar           
  • 1 teaspoon Dijon mustard
  • 2 tablespoons applesauce
  • ¾ cup canola oil
  • Salt, to taste

For the salad:

  • 4 cups baby arugula
  • 1 Granny Smith apple, cored and thinly sliced


For the vinaigrette:

In a small bowl, combine the vinegars, mustard, and applesauce. Whisk until well combined. Continue to whisk and in a slow and steady stream add the canola oil until the mixture is thick and creamy. Season lightly with salt and set aside.

For the salad:

In a medium-sized salad bowl, combine the arugula and apple. Drizzle on the vinaigrette and toss lightly before serving.
