Ingredients
  • 2 tablespoon olive oil
  • 1-2 cloves of garlic
  • 1 medium onion, chopped
  • 2 tablespoon simply organic parsley
  • 1 celery stalk, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cans (14 ounce) artichoke hearts, drained
  • 2 cup low-sodium chicken broth, plus extra, as needed
  • 1 large red pepper
  • 2 cup fresh arugula
  • 1 lemon

  2. In a medium saucepan add olive oil, onions, garlic, parsley, celery, salt & pepper, and saute for 5 minutes. Then add in the 2 cans of artichokes, let saute for another 5 minutes. Add in chicken broth to your saucepan, bring to boil. Remove from heat, add arugula into your Vitamix blender. Then pour in your artichoke mixture. Take red pepper and cut along the stem and remove seeds. Slice into 3 or 4 pieces. Take a microwave safe bowl and add 1/2 cup of water then place in peppers and cover with clear wrap. Microwave for 3 minutes. Remove from bowl and add in blender. Blend until smooth. Squeeze the juice of 1 lemon into the blender and turn on for 1 second. Pour into serving bowl and enjoy!
