Ma is an expert at adapting recipes. This one for a crispy pork belly and watermelon salad is a great example of how she takes something she sees somewhere else and transforms it into a homemade meal. Because she’s miles from Zak Pelaccio’s Fatty Cue in New York City, she decided to try this salad out for herself after she saw it on Food Network’s Diners, Drive Ins, and Dives. The results are perfect.
