Once the winter comes we need hearty, comforting, and warming recipes to help us through the winter. Braised meats, soups, stews, and slow-cooker recipes are among the ones that we turn to. Soups and stews are great because they don’t take that long to cook and they are dishes that will keep you feeling warm and full all day. Make sure you don’t eat the canned kind this winter. Instead, try some of these recipes to get you through the winter. You can go with a creamy and rich soup with a parsnip base or you can make something lighter with chickpeas and greens. Soups and stews definitely get us through the winter, which is why we made it the theme of this week’s SWAT.
Here are this week’s highlights:
Thai Coconut Soup
This Thai coconut soup is healthy, easy, and filling. Simi Jois of Turmeric N’ Spice blog made a silky coconut broth that just lightly coats crunchy veggies. One bite of this soup and you’ll keep going back for more.
Smoked Sausage and Lentil Soup
This is a smoky, savory, and hearty soup recipe made by Mary Cressler of Vindulge blog. For this recipe, you start by smoking the sausage, and while that’s happening you prep the vegetables for the soup. While the smoking does take a few hours, you should not skip this step because it adds great flavor to the dish.
Chicken Ramen Noodle Soup
Have you ever had ramen noodles out of the packet? You can take those same noodles and make a hearty, fresh, and delicious dish. Anna Voloshyna of Divine Cuisine blog did just that. This dish combines hearty chicken sausage with crisp vegetable, a medium boiled egg, and green onions. Anna used basic ingredients to make a warming and hearty soup, which is the reason why she’s the winner of this week’s SWAT.
