Though there is an infinite number of possibilities when it comes to potato salad, this side dish really boils down to three things: the potatoes, the dressing, and the add-ins.

The Potatoes
Some potatoes are starchy and dry, others are waxy and moist. The best potatoes for potato salad are waxy ones like red-skinned, new, or fingerling varieties. If you can’t find those, Yukon Gold potatoes (which are somewhere between waxy and starchy) make a good substitute.

The Dressing
One of the defining characteristics of a potato salad is its dressing. Some are dressed in a combination of mayonnaise and seasonings; others are served in a vinegar-based dressing. Both are delicious and easy to make, but if your potato salad will be served buffet style and you can't set it over ice to keep it cool, try a vinegar-based potato salad for your next cookout — mayonnaise can go bad quickly when exposed to heat.

The Add-Ins
The last key element to your potato salad are those ingredients that you toss in for texture, color, and flavor. Want to give your potato salad some crunch? Try sprinkling it with crispy, cooked, crumbled bacon. Need a splash of color and a bold pop of flavor? How about a chiffonade of fresh herbs? Whatever you decide, your potato salad will be delicious.
