While slow-cookers are traditionally used for braising meat — pork shoulder, short ribs, or pot roast, they can also be used for hearty vegetarian meals. This Meatless Monday use your slow-cooker to make delicious meals loaded with vegetables that will make you consider becoming a vegetarian.

Slow-cookers are amazing because you are able to throw all of your ingredients in, go off to work, and have dinner done when you walk in the door. If you are going the meatless route this Monday, enjoy vegetarian slow cooked lasagna, macaroni and cheese, or vegetarian chili.
