This healthier version of a pumpkin pie uses tofu to enhance its creaminess and nutritional profile. It takes only three simple steps to prepare, and the best part is your family and friends won’t know the difference.

Ingredients
  • 1 package tofu, such as house foods premium firm tofu (14 ounces), drained and pressed
  • 3/4 cup sugar
  • 2 1/2 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1 9-inch graham cracker pie crust
Directions
  1. Add tofu, sugar, lemon, vanilla, cinnamon and salt. Blend until smooth (at least 3 minutes).
  2. Add remaining ingredients and blend an additional minute.
  3. Pour filling into prepared crust and smooth surface.
  4. Bake pie at 350° for 40-50 minutes, until the top has browned thoroughly. Cool and Serve.
