Ingredients
- 2 pouches salmon, such as starkist's lemon dill salmon creations
- 2 cup zucchini, "noodles"
- 2 cup brussels sprouts, shredded
- 1 red pepper, diced
- 1 cup cannellini beans, rinsed and drained
- 1/3 cup extra virgin olive oil
- 3 tablespoon white wine vinegar
- 1/4 teaspoon minced garlic
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
Directions
- Mix zucchini “noodles”, Brussel sprouts, red pepper and beans in medium bowl.
- Toss the noodle salad with the dressing. (recipe for dressing below)
- Divide salad onto 2 plates and top each with a pouch of salmon.
- In a small bowl whisk oil, vinegar, garlic and salt and pepper.
