Roasted Purple Potatoes And Red Onion

  • 10 purple potatoes, cubed
  • 2 medium red onions, cubed
  • 2 cup of vegetables in season, cubed
  • 4 cloves garlic, crushed
  • 4 tablespoon olive oil
  • 3 sprigs rosemary, finely chopped
  • salt and pepper to taste
  1. Preheat the oven to 450 degrees.
  2. In a large bowl, toss the vegetables, garlic, and rosemary in the olive oil and mix to coat. Spread the mixture evenly in a roasting pan. Season with salt and pepper.
  3. Place in the oven and roast for roughly 20 minutes or until golden brown and thoroughly cooked.
