Quick Summer Pasta Salad

A yummy pasta salad perfect for the warm weather

This summer pasta salad is perfectly balanced: Apple cider vinegar gives a touch of acid, while mayonnaise adds richness. The recipe is rounded out with fresh dill and a hint of Worcestershire sauce. Make this for a picnic for some happy guests.

For the Quick Summer Pasta Salad

  • 1 8-ounce Box, dry macaroni pasta, such as Banza
  • 1 Cup frozen peas, thawed
  • 1 Cup arugula, chopped
  • 1/4 Cup red onion, chopped
  • 2 Stalks celery
  • 1 Tablespoon fresh dill, chopped
  • 1/2 Cup vegan (or regular) mayonnaise
  • 1 1/2 Teaspoon Dijon mustard
  • 1/2 Teaspoon Worcestershire sauce
  • 1 Teaspoon olive oil
  • 1 Tablespoon fresh lemon juice
  • 1/2 Teaspoon ground sea salt
  • 1/4 Teaspoon freshly ground pepper


For the Quick Summer Pasta Salad

Cook pasta according to package directions. Drain and rinse.

In a large bowl, add all remaining ingredients and combine. Add cold pasta and stir to combine.
