Hey, people put marshmallows in yams, so why not pineapples in sweet potatoes? A little tang to offset the mellow sweetness of sweet potatoes may just be what they need.

- 4 large sweet potatoes
- one 15 ¼-ounce can crushed pineapple, drained
Directions
- Preheat the oven to 400 degrees.
- Place the sweet potatoes directly on the middle rack of the oven. Bake for about 40 minutes (check for doneness by either gently squeezing potatoes or pricking them with a fork to see if they’re really soft). Remove from the oven and let cool for 10 minutes.
- Slice the potatoes in half lengthwise and let cool for 5 more minutes. Scrape the potato flesh from the skin into a large bowl. Add the drained pineapple chunks and mash with a potato masher or spoon until pineapple has broken down slightly, about 2-3 minutes.
