Ingredients
  • 1 1/2 cup powdered sugar
  • 4 tablespoon orange juice
  • 2 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup butter, at room temperature
  • 2 cup sugar
  • 2 large eggs
  • 2 cup ricotta
  • 4 tablespoon fresh-squeezed orange juice
  • zest of 1 orange
Directions
  1. Combine the powdered sugar and orange juice in a bowl and whisk together. Set aside.
  2. Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper.
  3. In medium-sized bowl, combine the flour, baking powder, and salt. Whisk until these ingredients are combined. Set aside.
  4. In another medium-sized bowl, combine the butter and sugar. Beat until light and fluffy, about 3-4 minutes. Add the eggs, 1 at a time until well mixed. Add the ricotta, orange juice, and orange zest. Beat to mix.
  5. Stir in the dry ingredients into the butter-sugar mixture and mix well. Spoon the dough (about 1 tablespoon per cookie) onto the cookie sheet. Bake for about 12-14 minutes or until the edges are slightly golden. Remove from the oven and cool completely.
  6. Spoon about ½ teaspoon of the glaze onto each cookie and allow the glaze to harden, about 5-10 minutes.
