Mom's Banana Bread

Ingredients
- 1 1/14 cup all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 ripe bananas
- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup buttermilk
- 1 tablespoon vanilla extract
Directions
- Step 1: Preheat the oven to 330F. Grease a 9-inch loaf pan.
- Step 2: In a large bowl, combine the 1 1/4 cup flour, 1 cup sugar, 1 teaspoon baking soda and 1/2 teaspoon salt. Give it a good mix.
- Step 3: In a separate bowl, mash the 2 bananas, then mix in 2 eggs, 1/2 cup oil, 1/4 cup buttermilk and 1 tablespoon vanilla. Gently mix the dry ingredients with the wet. Pour into the prepared loaf pan.
- Step 4: Bake for about one hour or until a toothpick inserted into the middle of the bread comes out clean. Remove from the oven and allow to cool for at least 10 minutes before serving. Store in a sealed bag on the counter for up to a few days, or tightly wrapped with foil and plastic wrap in the freezer for up to 1 month.
