- 1 package puff pastry dough
- 3 tomatoes
- Swiss cheese or soy cheese, to taste
- 1 Tablespoon olive oil
- Salt and pepper (to taste)
- Thyme (optional)
- Tapenade (optional)
Spread out the dough and cut out circles using an 8 ounce glass. Place the circles of dough on a baking tray. Rinse and dry the tomatoes. Slice them and arrange one slice on each circle of dough. Season with salt and pepper, sprinkle some cheese and thyme, and pour a bit of olive oil. Preheat oven to 350 degrees F for 10 minutes. Bake for 20 minutes or until the cheese is melted and golden. These tarts can be served with tapenade, or accompanied by a green salad for a light dinner.
