These bite-sized tarts are a great recipe to serve to people who love to snack. The tasty bites will start things off right, and guests will feel OK about eating a little more when the main dish is ready.

Mini Tomato Tarts
Ingredients
  • 1 package puff pastry dough
  • 3 tomatoes
  • swiss cheese or soy cheese, to taste
  • 1 tablespoon olive oil
  • salt and pepper (to taste)
  • thyme (optional)
  • tapenade (optional)
Directions
  1. Spread out the dough and cut out circles using an 8 ounce glass. Place the circles of dough on a baking tray. Rinse and dry the tomatoes. Slice them and arrange one slice on each circle of dough. Season with salt and pepper, sprinkle some cheese and thyme, and pour a bit of olive oil. Preheat oven to 350 degrees F for 10 minutes. Bake for 20 minutes or until the cheese is melted and golden. These tarts can be served with tapenade, or accompanied by a green salad for a light dinner.
